This wine is born from the union of great biodynamic and organic winegrowers, both in their projects come together to give us the more boreal character (all vineyards are planted in north orientation) of the Cote de bars.
Clandestine Boréal – Winery: Vouette & Sorbée – Winemakers: Bertrand Gautherot and Benoît Doussot – Variety: Pinot Noir – Vines: 30 years old – Soil: Calcareous – Altitude: 300 meters above sea level – Aging: 24 months on lees – Dosage: 0 g/l – Origin: Côte des Bar, Champagne, France – Estate: Côte des Bar.
Pairing: White meats, fatty stews, fish, pasta, vegetables, fatty cheeses and pâtés.
Tasting Notes: Straw yellow in color, it presents a marked fruity character with citrus notes, especially green apple. On the nose, there are also hints of fine yeast and pastry. On the palate, it is balanced, with very fine bubbles, great tension, and a long, persistent finish. A pure, precise, and highly elegant champagne.
